Scarlett Red...

A friend of mine finally perfected red velvet cupcakes. They are moist, velvety and rich in colour. I shall be baking this weekend.

 Moist Red Velvet Cupcakes
Ingredients:
©      2 cups cake flour
©      2 tblspn cocoa powder
©      1 tsp baking powder
©      1 tsp baking soda
©      1 tsp vinegar
©      2 cups sugar
©      2 eggs
©      1 cup oil
©      1 cup buttermilk
©      ½ cup warm coffee
©      2 bottle red food colouring
©      1 tsp salt
Method:
1.      Sift the salt, flour and baking powder
2.      Mix eggs, sugar and oil
3.      Mix buttermilk, food colouring and cocoa
4.      Add 1/3 of each of the three mixtures together and continue until the mixture is all in one bowl
5.      Mix the vinegar and baking soda and add
6.      Bake at 180 degrees Celsius for  +_ 20 minutes
7.      Allow to cool and decorate as desired
